VIDEO | Feed A Family For A Fiver - Healthy Cottage Pie

30 minutes serves 4
Ingredients
  • 400g lean beef mince. 
  • 600g potatoes, diced
  • 100g Philadelphia Lightest
  • 80ml milk
  • 150g carrots
  • 1 tin of tomatoes
  • 1 tbsp tomato purée
  • 1 Kallo beef stock cube made up with 500ml water.
  • 1 large onion
  • Low fat cooking spraySalt and pepper

To Serve

  • 200g peas
Method
  1. Pre-heat the oven to gas mark 6/200C/190C fan
  2. Boil the potatoes until soft.
  3. Mash with the Philadelphia Lightest, milk and salt and pepper.
  4. Fry the onion in low cal spray until soft.
  5. Add the carrots and cook for about 3 minutes.
  6. Add the beef and brown.
  7. Add the tomatoes, tomato purée and stock.
  8. Bubble until reduced, about 20-25 minutes, stirring occasionally. Season to taste.
  9. Place in a baking tray and top with the potatoes.
  10. Bake for 20 minutes until golden brown.
  11. Enjoy!
