PORK WITH COURGETTE TAGLIATELLE
- 100g minced Pork
- 200g Courgette
- 100g Carrots
- 1 clove Garlic
- 1/3 Vegetable stock pot
- 1/4 onion
- 1 tbsp Tomato puree
- 1 tsp Paprika
- Fresh Basil
Use a vegetable peeler to slice the Carrot & Courgette like a Tagliatelle. Once all cut set aside for the end.
Heat a frying pan with Fry Light and cook your onion until golden. Add mince meat with stock pot, a little water, Tomato puree, Paprika & Garlic. Once mixed and cooked through simmer at a low heat.
In another frying pan heat Fry Light over a high heat and stir fry your Carrots & Courgette for 3-4 minutes.
Serve with a little fresh Basil chopped.
