VIDEO | Feed A Family For A Fiver - Tuna Pasta Bake

30 minutes serves 4
Ingredients
  • 2 tins of tuna
  • 320g cooked pasta (140g uncooked)
  • 1 tin chopped tomatoes (400g)
  • 150g courgette, diced
  • 150g mushrooms, chopped
  • 150g sweetcorn
  • 120g Philadelphia Lightest
  • 1 onion
  • 1 tbsp tomato purée
  • Low fat cooking spray
  • 2 garlic cloves, minced

Store cupboard ingredients

  • Basil 1 tsp
  • Coriander ½ tsp
  • Cumin ½ tsp
  • Chilli ¼ tsp

Optional

  • Fresh basil
  • Lettuce (to serve)
Method
  1. Pre-heat the oven to gas mark 6/200C/190C fan
  2. Cook the pasta according to the pack instructions.
  3. Fry the onion in low cal spray until soft.
  4. Add the courgettes and mushrooms and cook until soft.
  5. Add the garlic and cook another minute.
  6. Add the tuna and stir.
  7. Add the basil and spices and cook for 30 seconds.
  8. Add the tomatoes, tomato purée and sweetcorn and bubble for about 3 minutes.
  9. Stir in the Philadelphia Lightest and the pasta.
  10. Tip into a baking tin and bake for 15 minutes.
  11. Enjoy!
